Goat Chops

  • 8 Goat Chops (about 2 lbs)
  • 2 T. Olive Oil
  • 3 Cloves Garlic, Minced
  • 2 - 14oz. cans Stewed Tomatoes
  • 1 Medium Onion, Chopped
  • Season to taste with basil, rosemary, oregano, tarragon, and/or salt and pepper.

In a large skillet, heat olive oil over medium heat. Sprinkle chops lightly with flour and brown slowly about 5 minutes on each side. Set aside. In the same skillet, saute garlic, onions, tomatoes, basil, rosemary, oregano, tarragon, salt and pepper. Simmer for another 5 minutes at low heat. Add goat chops and simmer until tender. Serve over hot rice.
